Artichoke Nibblers

2 - 6 oz jars of artichokes 1/8 tsp each: pepper, oregano, tabasco
1 small onion, chopped finely 1/2 lb sharp cheddar cheese
1 clove garlic, minced 2 Tbsp parsley
4 eggs, beaten 1/4 tsp salt
1/4 cup breadcrumbs 1 small jar pimento (optional)

 

Method

Drain the liquid from one jar of artichokes into frying pan,

Drain and discard liquid from 2nd jar of artichokes.

Sautee onions and garlic in liquid in frying pan

Chop artichoke into quarters.

Combine eggs, crumbs, salt and seasoning

Stir in remainding ingredients, except for parsley

Add onion mixture

Spread into a 7" x 11" buttered baking dish

Sprinkle with parsley

Bake 350º F for 30 minutes or until lightly set

Cool and cut into 1" squares

These are even great reheated!

Cheese Roll

1 lb sharp cheddar cheese, grated
1/2 cup mayonnaise
1 egg, hard-boiled, chopped
2 Tbsp each: chopped onion, olives, pickles, pimento
1/4 cup crushed saltines or any plain cracker

Method

Mix all together

Shape into long roll in wax paper and refrigerate

Surprise Spread

1 - 8 oz cream cheese, softened 1 green pepper, chopped
1/2 cup sour cream 3 green onions, chopped
1/4 mayonnaise 1 tomato, diced
2 - 4 oz cans of small or broken shrimp, rinsed and drained 1 cup seafood cocktail sauce

Method

Mix first 3 ingredients together. Spread over 12" pizza size pan or glass plate

Scatter shrimp over cheese mixture. Add layers of seafood sauce,

mozzarella cheese, green pepper, onions and tomato.

Cover and chill until ready to serve.

Supply assorted crackers and spoons for spreading.

Tex-Mex Dip

3 medium avocados 1 pkg taco seasoning
2 Tbsp lemon juice 1 can refried beans
1/2 tsp salt 3 med tomatoes, chopped
1/2 tsp pepper 2 cup grated cheddar cheese
1 cup sour cream 1 bunch green onions
1/2 cup mayonnaise  

 

Method

Peel, pit and mash avocados with salt, pepper and lemon juice

Mix sour cream with mayonnaise and taco seasoning

Spread beans on shallow platter, spread avocado mix over beans

Cover avocados with sour cream mix

Sprinkle with chopped tomatoes, chopped onions.

Cover with grated cheese.

Serve with tortilla chips.

Layer of chopped olives (optional)
