The Ultimate Chocolate Cake

2 cups flour 4 eggs
2/3 cup cocoa 1 tsp vanilla
1 1/4 tsp baking soda 1 cup mayonnaise
1/4 tsp baking powder 1 1/3 cup water
1 2/3 cup sugar  

 

Method

Grease and flour 2 - 9" layer cake pans (or equivalent)

Mix first 4 ingredients, set aside

In blender, beat eggs, sugar and vanilla

At low speed blend in mayonnaise

Continue to blend alternating flour mixture with water,

Beginning and ending with flour mixture.

Pour into pans

Bake 350º F oven 30-35 minutes,

or until tester comes out clean.

Cool in pan for 10 minutes

Remove from pans and cool on racks. Frost.

Blueberry Hill

 

Crust:

1 1/2 cup graham wafer crumbs

1/4 cup butter, melted

Mix together, place 3/4 in 8 x 8" pan

Refrigerate

Top:

34 large marshmallows

1/2 cup milk

Melt marshmallows with milk in heavy saucepan

Cool

Beat l cup of whipping cream with 1 tsp vanilla

Add marshmallow mixture

Put 3/4 of this mixture over the crumb crust.

Cover with l can of blueberry pie fill

(or make your own)

Add remaining marshmallow mixture

Sprinkle with remaining crumb mixture

Chill until serving.

Pineapple Fluff Dessert

 

Light and fluffy and delicious

 

First layer:

2 1/2 cups vanilla or graham wafer crumbs

1/2 cup melted butter

Mix, pack all but 1/2 cup of the mixture firmly into a 9" square glass pan.

Bake in slow oven 300º for 15 minutes. Cool

 

Second layer:

1/2 cup soft butter

1 1/2 cups sifted icing sugar

2 unbeaten eggs

Beat together until light and fluffy.

Spread over first layer.

 

Third layer:

1 can crushed pineapple, drained thoroughly

1/2 pint whipping cream, whipped

Combine and spread over second layer

Sprinkle with remaining crumb mixture.

Refrigerate for several hours.
