My Grandma's Whole Wheat Bread Recipe

(Please note that most of these measurements are guestimates, we never measure accurately when baking bread)

1 large egg size scoop of crisco shortening
1/2 cup brown sugar
2 heaping Tbsps molasses
4 tsp salt
4 cups boiling water
2 cups milk
6 Tbsps fermipan yeast, mixed with 4 cups of all-purpose flour
Enough whole wheat flour to make a medium stiff dough

 

Method

Pour boiling water over shortening, sugar, molasses and salt.

Mix until all ingredients are dissolved. Add milk.

Stir in dry yeast that has been mixed with white flour.

Add enough whole wheat flour to make a medium stiff dough.

Knead as you add the flour. Never add too much flour at one time

YOU DO NOT WANT THE DOUGH TOO STIFF

*If you like you can add cracked wheat and/or seven grain cereal to

the liquids just before adding the flours.

Blueberry Muffins

(This recipe is for a large crowd, or large family)

9 cups white flour 4 cups sugar
1 Tbsp salt 1 - 2 Tbsp vanilla
4 Tbsp baking powder 1 1/2 cups oil
6 cups blueberries 3 cups milk
6 whole eggs (using powdered skim milk saves)
1/2 lb melted margarine  

 

Method

Beat eggs in blender with sugar and vanilla

Add in melted margarine, oil and milk.

Mix well.

In very large bowl mix flour, salt, soda and blueberries

Make a well in the center and pour liquid in

Mix gently

Fill non-stick muffin tins full.

Or use cupcake papers to line the muffin tin and fill full.

THE BIGGER THE BETTER!!

You can substitute chocolate chips for the blueberries (just don't use quite as many)

 Apple Streusel Muffins

Topping:

1/2 cup packed brown sugar

1/4 cup all purpose flour

1/4 cup butter or margarine

In a small bowl rub sugar, flour and butter until crumbly. Set aside.

1 1/2 cups all purpose flour 1 egg
1/2 cup sugar 1/4 cup milk
3 tsp baking powder 1/4 cup cooking oil
1/2 tsp salt 3/4 cup shredded apple

Method

In mixing bowl stir flour, sugar, baking powder and salt together.

Make a well in center.

In mixer beat egg, milk and oil to blend. Stir in apple.

Pour into well. Stir until just moistened.

Fill muffins tins near full. Sprinkle with topping.

Bake in 350º oven for 20-25 minutes, or until done.

Cinnamon Buns

2 eggs 1 tsp salt
3 cups warm water 2 Tbsp Fermipan yeast
6 Tbsp sugar (dry yeast)
6 Tbsp oil 7 - 8 cups all-purpose flour

 

Method:

In a large bowl whip eggs, sugar, salt, oil and water

Mix yeast with 4 cups flour. Add flour and yeast to liquid and mix well

Gradually mix in remaining flour kneading

as you add until it becomes a medium-soft consistency.

Let dough rise for 15 minutes, punch-down.

Let it rise again for 15 minutes,

Punch down and roll out on greased surface

Spread with margarine, Sprinkle with brown sugar and cinnamon.

Add raisins or nuts if desired.

Roll, cut in 1 - 1 1/2 inch pieces, place close together on baking sheet.

Let rise for about 1/2 hour

Bake 350º for 15-18 minutes.
