Chocolate Chip Cookies

(I always double the recipe, so that's how I will give it to you, 1/2 it if you think it is too much)

2 cups margarine (butter if you're rich) 4 eggs
1 1/2 cups white sugar 4 1/2 cups flour
1 1/2 cups brown sugar 2 tsp baking soda
2 tsp vanilla 1 tsp salt
3 cups chocolate chips 1 cup chopped pecans
  (I don't like walnuts)

 

Method

Cream margarine, sugar, brown sugar, and vanilla in blender.

Beat in eggs; beat well.

Continue to beat in flour, salt and soda.

Stir in chocolate chips and nuts

Using a scoop (there are many sizes to choose from,

pick your preferred size) drop onto cookie sheet.

Bake 350º (Convection oven if you have one)

Anywhere from 8 - 13 minutes depending on size.

Do not over bake, watch carefully until you establish the perfect

Baking time.

Remove from cookie sheet and cool on wire racks.

Double Chocolate Cookies

(Again this is a double recipe)

2 1/2 cups butter or margarine 1 1/2 cups HERSHEY's Cocoa
4 cups white sugar 2 tsp baking soda
4 eggs 1 tsp salt
4 tsp vanilla 3 cups chocolate chips
4 cups all-purpose flour  

(My kids love them with mint chips)

Method

Cream butter and sugar in blender until light and fluffy

Beat in eggs and vanilla

Gradually (on low speed or oops!! what a mess)

Blend in flour, cocoa, soda and salt.

Stir in chips

Drop by scoop onto cookie sheet

Bake 350º for 8 - 12 minutes

DO NOT OVERBAKE

Cool for about l minute on cookie sheet then

Remove to wire racks to cool completely.

Chipits Fudgy Macaroons

 

2/3 cup light cream 6 oz semi-sweet chipits
3/4 cup sugar 2 cups cornflakes
1Tbsp margarine 1 1/4 cup shredded coconut
1 tsp vanilla 1/2 cup chopped nuts

Method

Put cream, sugar and margarine in heavy saucepan

Cook and stir over medium heat until mixture boils

Stir for 3 minutes over heat

Remove from heat and add vanilla & chips

Stir until smooth

Add cornflakes, nuts and coconut, stir well

With teaspoons place in mounds on wax paper covered trays

Chill. Serve and enjoy

Crackles

3/4 cup shortening 1 tsp salt
1 cup brown sugar 1 tsp baking soda
1 egg 1/2 tsp ground cloves
1/4 cup molasses 1 tsp ground cinnamon
2 cups flour 1 tsp ground ginger

 

Method

Mix together and refrigerate overnight

Roll into approx. 1" balls

Dip balls in white sugar

Place on cookie sheet

Bake 350º for 8 - 10 minutes

Delicious - great aroma too!!!
